🥗 Couscous Salad with Watermelon and Grilled Chicken – Summer Recipe

Ingredients
- 2 mini watermelons
- 200 g couscous
- 300 g chicken breast fillet
- 1 cucumber
- 150 g feta
- 1 red onion
- 1 tbsp fresh mint and parsley
- 3 tbsp olive oil
- juice of 1 lime
- 1 tsp salt
- 1/2 tsp pepper
Instructions
- 1. Prepare the couscous according to the instructions on the package and let it cool completely afterwards. Meanwhile, halve the mini watermelons and carefully hollow them out. Dice the flesh and set aside.
- 2. Season the chicken breast with some olive oil, salt and pepper and grill it in the grill pan on both sides until golden brown. Let it rest briefly before slicing it into strips.
- 3. Mix the couscous with cucumber, onion, herbs, the watermelon cubes and crumbled feta. Season everything with lime juice and olive oil. Fill the salad into the hollowed-out mini watermelons and place the grilled chicken on top.
