🍲 Potato Soup with Sausages

Ingredients
- 400 g Potatoes
- 100 g Carrots
- 1 Onion
- 2 Zehen Garlic
- 800 ml Vegetable Broth
- 200 g Sausages (e.g. German Sausages)
- 100 ml Cream
- 1 EL (gehackt) Parsley
Instructions
- 1. Finely chop the onion and garlic, peel and dice the potatoes and carrots.
- 2. In a large pot, sauté the onion and garlic in some oil until translucent.
- 3. Add the potatoes and carrots and sauté briefly.
- 4. Add the vegetable broth and bring to a boil. Then let simmer for 20 minutes.
- 5. While the soup is cooking, slice the sausages and fry them in a pan.
- 6. Blend the soup, refine with cream, and season with salt and pepper.
- 7. Mix the fried sausages into the soup and garnish with parsley.
