  2. 2. In a large pot, sauté the onion and garlic in some oil until translucent.
  3. 3. Add the potatoes and carrots and sauté briefly.
  4. 4. Add the vegetable broth and bring to a boil. Then let simmer for 20 minutes.
  5. 5. While the soup is cooking, slice the sausages and fry them in a pan.
  6. 6. Blend the soup, refine with cream, and season with salt and pepper.
  7. 7. Mix the fried sausages into the soup and garnish with parsley.
