🐙 Light Lentil-Octopus Salad (Mini Cuisine Style)

Ingredients
- 200 g Cooked octopus
- 180 g Pre-cooked brown lentils
- 150 g Cherry tomatoes
- 50 g Red onion
- 30 ml Lemon juice
- 15 ml Extra virgin olive oil
- 10 g Fresh parsley
- 2 g Salt
Instructions
- 1. Wash the tomatoes and cut them into quarters.
- 2. Dice the red onion into very fine cubes.
- 3. Wash and finely chop the parsley.
- 4. Cut the octopus into bite-sized pieces.
- 5. Place the lentils in a large bowl. Add octopus, tomatoes, onion, and parsley.
- 6. Whisk the lemon juice with olive oil and salt in a small jar.
- 7. Pour the dressing over the salad mixture. Mix everything carefully.
- 8. Let the salad stand for 5 minutes to let the flavors meld.
