  1. 1. Open the cans of chickpeas and black beans, rinse them under cold water and let them drain.
  2. 2. Cut the red onion and cucumber into very small cubes.
  3. 3. Wash the parsley, chop it finely and mix it in a large bowl with all vegetable and bean ingredients.
  4. 4. Whisk the olive oil, lemon juice and smoked paprika powder in a small bowl to make a marinade.
  5. 5. Pour the marinade over the salad and toss it well.
  6. 6. Let the salad sit for approx. 5 minutes to allow the flavors to infuse.
