🫘 Bean Salad with Smoked Paprika and Lemon

Ingredients
- 240 g (Abtropfgewicht) Chickpeas (can)
- 200 g (Abtropfgewicht) Black beans (can)
- 100 g Red onion
- 150 g Cucumber
- 30 ml Olive oil
- 30 ml Lemon juice (freshly squeezed)
- 10 g Smoked paprika powder
- 20 g Fresh parsley
Instructions
- 1. Open the cans of chickpeas and black beans, rinse them under cold water and let them drain.
- 2. Cut the red onion and cucumber into very small cubes.
- 3. Wash the parsley, chop it finely and mix it in a large bowl with all vegetable and bean ingredients.
- 4. Whisk the olive oil, lemon juice and smoked paprika powder in a small bowl to make a marinade.
- 5. Pour the marinade over the salad and toss it well.
- 6. Let the salad sit for approx. 5 minutes to allow the flavors to infuse.
