🍛 Indian Lentil Curry with Spinach

Ingredients
- 200 g red lentils
- 150 g spinach
- 400 ml coconut milk
- 1 onion
- 2 Zehen garlic
- 1 Stück ginger
- 1 EL curry powder
- 500 ml vegetable broth
- 1 TL salt
- 0.5 TL pepper
Instructions
- 1. Chop onion, garlic, and ginger.
- 2. Sauté onion, garlic, and ginger in a large pot.
- 3. Add curry powder and sauté briefly.
- 4. Add red lentils, coconut milk, and vegetable broth.
- 5. Bring to a boil and simmer for 20 minutes.
- 6. Add spinach shortly before the end and stir.
- 7. Season with salt and pepper and serve.
