🍽 Creamy Oven Vegetable with Feta

Ingredients
- 2 bell pepper
- 1 zucchini
- 1 eggplant
- 2 carrots
- 200 g feta cheese
- 3 EL olive oil
- 1 TL thyme
- 1 TL oregano
- 1 TL salt
- 0.5 TL pepper
Instructions
- 1. Preheat the oven to 200°C.
- 2. Chop bell pepper, zucchini, eggplant, and carrots into small pieces.
- 3. Add the vegetables to a large bowl and combine with olive oil, thyme, oregano, salt, and pepper.
- 4. Arrange the vegetables on a baking sheet and roast for 25 minutes in the preheated oven.
- 5. Crumble the feta cheese and sprinkle it over the vegetables after 25 minutes.
- 6. Continue baking for another 15 minutes until the feta is lightly golden.
- 7. Take it out of the oven and serve hot.
