🍝 Pasta with Green Asparagus and Cherry Tomatoes

Ingredients
- 250 g spaghetti
- 250 ml cream
- 250 ml vegetable broth
- 200 g green asparagus
- 100 g cherry tomatoes
- 1 onion
- 4 garlic cloves
- 2 EL olive oil
- 1 TL chili flakes
- 1 EL tomato paste
- nach Geschmack salt
- nach Geschmack pepper
- zum Garnieren parsley
- zum Garnieren parmesan
Instructions
- 1. Chop onion finely, halve cherry tomatoes, and prepare green asparagus (remove woody ends and cut into pieces about 3 cm long).
- 2. Fill a pot with water and salt and bring it to a boil.
- 3. Cook the pasta according to the instructions on the package.
- 4. While the pasta is cooking, sauté the onions and garlic in a pan.
- 5. Add the prepared green asparagus and sauté.
- 6. Add tomato paste and briefly fry.
- 7. Deglaze with a ladle of pasta water and add the halved cherry tomatoes.
- 8. Let everything simmer for a few minutes, then add vegetable broth and cream and let it reduce.
- 9. Season with salt, pepper, and chili flakes.
- 10. Add the cooked spaghetti to the sauce and mix everything well.
- 11. Serve the dish on plates and garnish with parmesan and parsley. Now just enjoy!
