🍲 Legume Stew with Vegetables

Ingredients
- 200 g mixed legumes (e.g., lentils, beans)
- 2 carrots
- 1 Stange celery
- 1 onion
- 2 Zehen garlic
- 2 EL olive oil
- 600 ml vegetable broth
- 1 TL salt
- 0.5 TL pepper
- 1 TL herbs (thyme, oregano)
Instructions
- 1. Soak and rinse legumes according to package instructions.
- 2. In a large pot, heat olive oil, sauté onion and garlic.
- 3. Add carrots and celery and sauté for another 5 minutes.
- 4. Add legumes and vegetable broth, bring to a boil.
- 5. Reduce heat and simmer for 25 minutes until legumes are tender.
- 6. Season with salt, pepper, and herbs, and serve.
