🍋 Oven-Lemon Polenta Coins

Ingredients
- 150 g Fine polenta flour (cornmeal)
- 300 ml Milk
- 60 g Sugar
- 1 Stück Lemon (zested)
- 2 Stück Eggs (Size M)
- 30 g Butter
Instructions
- 1. Preheat the oven to 180 degrees and grease a small baking dish.
- 2. Boil the milk with the sugar and lemon zest in a pot.
- 3. Stir in the polenta flour and cook for 5 minutes while stirring constantly.
- 4. Remove the pot from the heat and stir in the butter.
- 5. Let the polenta cool slightly, then stir in the eggs one by one.
- 6. Pour the mixture into the baking dish and bake for 25 minutes.
- 7. Cut the cooled polenta into round coins.
- 8. Fry the coins briefly in a pan on both sides until golden brown.
