  1. 1. Preheat the oven to 200 degrees. Wash the pumpkin, cut it in half, and remove the seeds.
  2. 2. Cut the pumpkin, zucchini, and eggplant into slices approximately 5 mm thick.
  3. 3. Finely chop the onion and garlic and sauté them in half of the olive oil in a pan.
  4. 4. Place the vegetable slices alternately in a baking dish until the vegetables are used up.
  5. 5. Pour the onion-garlic mixture over the vegetables in the dish. Distribute the thyme leaves.
  6. 6. Drizzle everything with the remaining olive oil, and season generously with salt and pepper.
  7. 7. Cover the dish with aluminum foil and bake the tian for 25 minutes.
  8. 8. Remove the foil and bake the tian for another 15 minutes until the vegetables are tender.
  9. 9. Let the tian rest for 5 minutes before serving.
