🎃 Autumn Tian with Pumpkin and Thyme

Ingredients
- 600 g Pumpkin (e.g., Hokkaido)
- 200 g Zucchini
- 200 g Eggplant
- 40 ml Olive oil
- 10 g Fresh thyme
- 100 g Onion
- 20 g Garlic
- 5 g Salt
- 2 g Black pepper
Instructions
- 1. Preheat the oven to 200 degrees. Wash the pumpkin, cut it in half, and remove the seeds.
- 2. Cut the pumpkin, zucchini, and eggplant into slices approximately 5 mm thick.
- 3. Finely chop the onion and garlic and sauté them in half of the olive oil in a pan.
- 4. Place the vegetable slices alternately in a baking dish until the vegetables are used up.
- 5. Pour the onion-garlic mixture over the vegetables in the dish. Distribute the thyme leaves.
- 6. Drizzle everything with the remaining olive oil, and season generously with salt and pepper.
- 7. Cover the dish with aluminum foil and bake the tian for 25 minutes.
- 8. Remove the foil and bake the tian for another 15 minutes until the vegetables are tender.
- 9. Let the tian rest for 5 minutes before serving.
