Ingredients
- 400g Pork Chops
- 2 EL Olive Oil
- 2 Zehen Garlic
- 1 EL Thyme
- 1 EL Rosemary
- 1 EL Parsley
- 1 TL Salt
- 1 TL Pepper
Instructions
- 1. Pat the 400 g pork chops dry with paper towels. Never wash them, or they’ll become mushy.
- 2. Peel 2 cloves of garlic and press them through a garlic press. Alternatively: chop them very finely.
- 3. Finely chop 1 tbsp thyme, 1 tbsp rosemary, and 1 tbsp parsley. The herbs should be like dust.
- 4. Mix the herbs, garlic, 1 tsp salt, 1 tsp pepper, and 1 tbsp olive oil in a small bowl.
- 5. Rub the pork chops with the remaining 1 tbsp olive oil. This helps the herb crust stick better later.
- 6. Spread the herb mixture generously over the pork chops. Press the herbs firmly onto the meat.
- 7. Let the pork chops rest at room temperature for 10 minutes. This allows the flavors to penetrate the meat.
- 8. Preheat the air fryer to 180 °C. This takes about 3 minutes. Without preheating, the crust will be grey.
- 9. Place the pork chops flat in the basket. Make sure they don’t touch so the air can circulate.
- 10. Cook the pork chops for 15 minutes at 180 °C. Flip them after 7.5 minutes for even crispiness.
- 11. Check the core temperature: it should be 65 °C. If not, add another 2-3 minutes.
- 12. Remove the pork chops and let them rest on a plate for 5 minutes. The juices will redistribute in the meat.
- 13. Cut the pork chops into strips. The crust should be golden brown and crispy, the meat juicy.
