  1. 1. Preheat the oven to 200 °C (390 °F) conventional mode. Line a baking sheet with parchment paper.
  2. 2. Roll out the puff pastry on a floured surface to approx. 3 mm thickness. Shape it into a rectangle to fit the baking sheet.
  3. 3. Press a 2 cm wide border up along the edges with your fingers so the filling does not leak.
  4. 4. Prick the pastry base several times with a fork (this is called docking to prevent bubbles from forming).
  5. 5. Distribute the crumbled feta and goat cheese evenly over the pastry base.
  6. 6. Whisk the eggs, cream, thyme, salt, and pepper in a bowl until combined.
  7. 7. Pour the cheese-cream mixture carefully over the pastry, but do not fill the border to the top.
  8. 8. Bake the tarte for 25 to 30 minutes until the border is golden brown and the center is set.
  9. 9. Let the tarte cool for 5 minutes before cutting it into four pieces.
