🧀 Savory Herb and Cheese Tarte with Crispbread Bits

Ingredients
- 320 g Puff pastry (frozen)
- 150 g Feta cheese (crumbly)
- 125 g Fresh goat cheese
- 3 Stk Eggs (Size M)
- 200 ml Heavy cream (30% fat)
- 1 EL Fresh thyme leaves
- 1 Prise Salt
- 1 Prise Black pepper (ground)
Instructions
- 1. Preheat the oven to 200 °C (390 °F) conventional mode. Line a baking sheet with parchment paper.
- 2. Roll out the puff pastry on a floured surface to approx. 3 mm thickness. Shape it into a rectangle to fit the baking sheet.
- 3. Press a 2 cm wide border up along the edges with your fingers so the filling does not leak.
- 4. Prick the pastry base several times with a fork (this is called docking to prevent bubbles from forming).
- 5. Distribute the crumbled feta and goat cheese evenly over the pastry base.
- 6. Whisk the eggs, cream, thyme, salt, and pepper in a bowl until combined.
- 7. Pour the cheese-cream mixture carefully over the pastry, but do not fill the border to the top.
- 8. Bake the tarte for 25 to 30 minutes until the border is golden brown and the center is set.
- 9. Let the tarte cool for 5 minutes before cutting it into four pieces.
