  1. 1. Rinse the red lentils under cold water.
  2. 2. Peel the potatoes and boil them in salted water for approx. 15 minutes until tender but firm.
  3. 3. Peel the carrots and celery and cut them into small cubes.
  4. 4. Finely dice the onion.
  5. 5. Heat the olive oil in a pot and sauté the onions, carrots and celery for approx. 5 minutes.
  6. 6. Stir in the tomato paste and paprika powder and fry for 1 minute.
  7. 7. Add the lentils and vegetable broth. Cook everything uncovered for approx. 20 minutes until the lentils are soft and the liquid has thickened.
  8. 8. Add the parsley to the lentil mixture and season with salt.
  9. 9. Drain the potatoes and puree them smooth with a little salt.
  10. 10. Put the lentils in a baking dish and spread the mashed potatoes on top. Score the surface with a fork.
  11. 11. Bake the dish for approx. 20 minutes at 200 degrees until the mashed potatoes are golden brown.
