🥔 Hearty Lentil Hachis Parmentier

Ingredients
- 200 g red lentils (dried)
- 600 g potatoes
- 2 Stück carrots
- 1 Stück celery stalk
- 1 Stück onion
- 2 EL tomato paste
- 500 ml vegetable broth
- 2 EL olive oil
- 1 TL sweet paprika powder
- 1 TL salt
- 2 EL chopped parsley
Instructions
- 1. Rinse the red lentils under cold water.
- 2. Peel the potatoes and boil them in salted water for approx. 15 minutes until tender but firm.
- 3. Peel the carrots and celery and cut them into small cubes.
- 4. Finely dice the onion.
- 5. Heat the olive oil in a pot and sauté the onions, carrots and celery for approx. 5 minutes.
- 6. Stir in the tomato paste and paprika powder and fry for 1 minute.
- 7. Add the lentils and vegetable broth. Cook everything uncovered for approx. 20 minutes until the lentils are soft and the liquid has thickened.
- 8. Add the parsley to the lentil mixture and season with salt.
- 9. Drain the potatoes and puree them smooth with a little salt.
- 10. Put the lentils in a baking dish and spread the mashed potatoes on top. Score the surface with a fork.
- 11. Bake the dish for approx. 20 minutes at 200 degrees until the mashed potatoes are golden brown.
