🍮 Hazelnut Fondant Flan

Ingredients
- 100 g White fondant (melted white chocolate)
- 200 ml Heavy cream (at least 30% fat)
- 30 g Roasted hazelnuts (coarsely chopped)
- 4 Stück Egg yolks
- 1 TL Vanilla extract
- 40 g Sugar
Instructions
- 1. Preheat the oven to 150 degrees Celsius (top/bottom heat).
- 2. Heat the cream in a small saucepan until just before boiling. Remove from heat and stir in the fondant until completely dissolved.
- 3. Whisk the egg yolks, vanilla extract, and sugar in a bowl until smooth.
- 4. Pour the warm chocolate-cream mixture into the egg mixture while whisking constantly.
- 5. Fill half of the hazelnuts into 4 small ramekins (approx. 150 ml).
- 6. Pour the flan mixture over the hazelnuts. Distribute the remaining hazelnuts on top.
- 7. Place the ramekins in a baking dish and fill it with hot water up to half the height of the ramekins (water bath).
- 8. Bake the flan for 45-50 minutes until it jiggles slightly but is set.
- 9. Let the flans cool in the water bath, then refrigerate for at least 4 hours.
