🍗 Quick Chicken Salimboccaccio

Ingredients
- 4 Stück (je ca. 120 g) Chicken breast fillet
- 8 Scheiben Prosciutto crudo (thinly sliced)
- 16 Blätter Fresh basil leaves
- 125 g Mozzarella (ball)
- 40 g Butter
- 1 EL Olive oil
- 1 Prise Salt
- 1 Prise Freshly ground pepper
Instructions
- 1. Cut the mozzarella ball into 4 equal pieces and divide the basil leaves accordingly. (Salimboccaccio translates to 'Jumps in the face' due to the heat upon serving).
- 2. Place one slice of prosciutto on each chicken fillet. Ensure the meat lies flat.
- 3. Place a piece of mozzarella and a few basil leaves on each fillet. Roll the chicken tightly and secure with a toothpick if necessary.
- 4. Heat butter and oil in a non-stick pan over medium heat. Fry the chicken rolls for approx. 4 minutes per side until golden brown.
- 5. Lower the heat, cover the pan and cook through for another 3-4 minutes until the core temperature reaches 75 degrees. The mozzarella should melt.
- 6. Remove the toothpicks. Serve the chicken immediately hot so the mozzarella melts and the sauce flows out. Serve with a simple leaf salad.
