  1. 1. Cut the mozzarella ball into 4 equal pieces and divide the basil leaves accordingly. (Salimboccaccio translates to 'Jumps in the face' due to the heat upon serving).
  2. 2. Place one slice of prosciutto on each chicken fillet. Ensure the meat lies flat.
  3. 3. Place a piece of mozzarella and a few basil leaves on each fillet. Roll the chicken tightly and secure with a toothpick if necessary.
  4. 4. Heat butter and oil in a non-stick pan over medium heat. Fry the chicken rolls for approx. 4 minutes per side until golden brown.
  5. 5. Lower the heat, cover the pan and cook through for another 3-4 minutes until the core temperature reaches 75 degrees. The mozzarella should melt.
  6. 6. Remove the toothpicks. Serve the chicken immediately hot so the mozzarella melts and the sauce flows out. Serve with a simple leaf salad.
