🥗 Greek Avgolemono

Ingredients
- 200 g Chicken breast
- 100 g Rice
- 2 EL Lemon juice
- 800 ml Chicken broth
- 2 Stück Eggs
- 1 Handvoll Parsley
- 0.5 TL Pepper
- 1 TL Salt
Instructions
- 1. Cook chicken in chicken broth until done.
- 2. Add rice and cook for another 10 minutes.
- 3. Whisk eggs and lemon juice together.
- 4. Add a ladle of hot broth to the egg mixture.
- 5. Stir the egg mixture into the soup.
- 6. Garnish with parsley and serve.
