🍛 Green Curry with Salmon

Ingredients
- 250g Salmon fillet
- 2 EL Green curry paste
- 400ml Coconut milk
- 1 Eggplant
- 1 Handvoll Thai basil
- 1 Lime
Instructions
- 1. Cut salmon into pieces and sauté in a pan.
- 2. Add green curry paste and sauté briefly.
- 3. Add coconut milk and bring to a boil.
- 4. Add eggplant and simmer for 10 minutes.
- 5. Serve with lime zest and Thai basil.
