🥗 Chickpea Bowl with Dried Tomatoes and Feta

Ingredients
- 500 g Chickpeas (canned, drained)
- 200 g Feta cheese
- 100 g Dried tomatoes (in oil)
- 150 g Rocket (arugula)
- 50 g Walnuts (whole kernels)
- 1 EL White sesame seeds
- 1 Stk. Lemon
- 2 EL Olive oil
- 1 Prise Black pepper
- 1 Prise Salt
Instructions
- 1. Place the drained chickpeas in a bowl.
- 2. Cut the feta cheese into 2 cm cubes.
- 3. Slice the dried tomatoes into strips.
- 4. Toast the walnuts in a dry pan over medium heat for 2-3 minutes until fragrant. Remove them from the pan.
- 5. Squeeze the juice of the whole lemon into a small bowl. Whisk it with the olive oil, salt, and pepper to make a dressing.
- 6. Wash and dry the rocket (arugula).
- 7. Combine the chickpeas, feta cubes, dried tomatoes, and rocket in a large bowl.
- 8. Pour the lemon-olive oil dressing over everything and toss gently.
- 9. Top with the toasted walnuts and sesame seeds.
