🥕 Roasted Sweet Potato Salad with Goat Cheese and Honey

Ingredients
- 400 g Sweet Potatoes
- 125 g Fresh Goat Cheese
- 80 g Arugula
- 40 g Walnut Halves
- 15 g Honey
- 10 ml Apple Cider Vinegar
- 20 ml Olive Oil
- 3 g Salt
- 1 g Black Pepper
Instructions
- 1. Preheat the oven to 200 degrees. Wash the sweet potatoes, peel them, and cut them into cubes of approx. 2 cm.
- 2. Mix the sweet potato cubes with 10 ml of olive oil, salt, and pepper. Spread them on a baking sheet.
- 3. Bake the sweet potatoes until crispy for 20 minutes. Take them out and let them cool for a moment.
- 4. Toast the walnut halves in a hot dry pan for 2 minutes until fragrant.
- 5. Mix the remaining olive oil, apple cider vinegar, and honey in a bowl to make a dressing sauce.
- 6. Place the arugula on a plate. Distribute the warm sweet potatoes on top and crumble the goat cheese over it.
- 7. Pour the dressing over the salad and sprinkle the toasted walnuts over it. Serve the dish immediately.
