  1. 1. Preheat the oven to 200 degrees. Wash the sweet potatoes, peel them, and cut them into cubes of approx. 2 cm.
  2. 2. Mix the sweet potato cubes with 10 ml of olive oil, salt, and pepper. Spread them on a baking sheet.
  3. 3. Bake the sweet potatoes until crispy for 20 minutes. Take them out and let them cool for a moment.
  4. 4. Toast the walnut halves in a hot dry pan for 2 minutes until fragrant.
  5. 5. Mix the remaining olive oil, apple cider vinegar, and honey in a bowl to make a dressing sauce.
  6. 6. Place the arugula on a plate. Distribute the warm sweet potatoes on top and crumble the goat cheese over it.
  7. 7. Pour the dressing over the salad and sprinkle the toasted walnuts over it. Serve the dish immediately.
