🍓 Strawberry Basil Ice Cream

Ingredients
- 300 g Fresh strawberries
- 10 g Fresh basil leaves
- 40 g Crystal sugar
- 50 ml Water
- 10 ml Lemon juice
- 100 ml Heavy cream or milk (for creamier version)
Instructions
- 1. Wash the strawberries and remove the green tops. Wash the basil leaves and pat them dry.
- 2. Dissolve the sugar in the water on the stove and heat briefly until a light syrup is formed. Let the syrup cool down.
- 3. Place the strawberries, the cooled syrup, the lemon juice, and the basil in a blender.
- 4. Blend the ingredients into a very fine puree. Press the mixture through a fine sieve to remove the basil fibers.
- 5. Stir the heavy cream (or milk) into the strawberry puree.
- 6. Pour the mixture into a freeze-proof container and place it in the freezer for 4 hours or overnight.
