🌶️ Fried stuffed peppers with quinoa

Ingredients
- 200 g Pepper (large, red)
- 100 g Quinoa (dry)
- 200 g Chickpeas (from the can, drained)
- 100 g Onion
- 5 g Garlic clove
- 2 g Oregano (dried)
- 15 ml Olive oil
- 3 g Salt
- 200 ml Water
Instructions
- 1. Wash the peppers and cut off the top. Remove the seeds.
- 2. Cook the quinoa in 200 ml of water for 15 minutes. Let it cool.
- 3. Finely dice the onion and the garlic.
- 4. Fry the onion and the garlic in 15 ml of olive oil for 5 minutes.
- 5. Mix the quinoa with the chickpeas, the onion mixture, and the oregano. Season with salt.
- 6. Fill the peppers with the mixture. Place them in a baking dish.
- 7. Pour 50 ml of water into the dish. Bake the peppers for 25 minutes at 180 degrees.
