  1. 1. Clean the pepper inside and cut it into approx. 2 cm wide strips. Set aside.
  2. 2. Heat half of the olive oil in a non-stick pan over high heat. Fry the pepper strips for 3 minutes until crispy. Remove them.
  3. 3. Add the remaining oil and garlic to the same hot pan. Fry the garlic for 30 seconds until fragrant, but do not let it burn.
  4. 4. Fry the shrimps in the garlic butter for 2 minutes on each side until pink and opaque. Remove them and add the peppers back.
  5. 5. Pour the sherry or wine into the pan and scrape off the caramelized bits from the bottom. Let the liquid reduce for 1 minute.
  6. 6. Return the shrimps and peppers to the pan. Season with salt and pepper. Mix everything.
  7. 7. Pour the dish into a hot bowl and sprinkle the parsley on top. Serve immediately.
