🐙 Gallega with Chickpeas (Chickpea Octopus Style)

Ingredients
- 400 g Chickpeas (Can or Jar)
- 500 g Waxy Potatoes
- 1 Stk Cucumber
- 50 g Pickles (Small)
- 1 Stk Onion (Red)
- 40 ml Olive Oil
- 1 TL Paprika (Sweet)
- 5 g Salt
- 2 g Black Pepper
Instructions
- 1. Rinse the chickpeas well and let them drain.
- 2. Peel the potatoes and cut them into cubes of approx. 2 cm.
- 3. Boil the potato cubes in salted water until they are tender (approx. 15 minutes). Let them cool and do not press them too hard into a mash.
- 4. Cut the cucumber into small cubes. Also cut the pickles finely.
- 5. Cut the red onion into very fine cubes.
- 6. Combine in a large bowl the cooled potatoes, the chickpeas, the cucumber, the pickles and the onion.
- 7. Dressing: Mix the oil, the paprika and the pepper in a small cup.
- 8. Pour the dressing over the salad and gently fold everything. Season with salt if necessary.
- 9. Let the salad rest for 15 minutes to allow the flavors to infuse.
