🥔 Galician Potato Skillet with Egg

Ingredients
- 600 g Potatoes (waxy)
- 2 Stk Peppers (red and green)
- 1 Stk Onion
- 4 Stk Eggs (Size M)
- 1 EL Paprika powder (smoked)
- 3 EL Olive oil
- 1 Prn Salt and pepper
Instructions
- 1. Peel the potatoes and cut them into thin strips or small cubes.
- 2. Dice the onion and peppers into small pieces.
- 3. Heat the olive oil in a large pan over medium heat.
- 4. Fry the potatoes in the pan for approx. 10 minutes until they are soft.
- 5. Add the onions and peppers and fry everything for another 5 minutes.
- 6. Season with smoked paprika powder, salt, and pepper.
- 7. Make 4 small indentations in the potato mixture and crack an egg into each indentation.
- 8. Cover the pan and let the eggs cook on low heat until the egg white is set.
- 9. Remove the entire pan mixture from the pan and divide it into 4 containers.
- 10. Let the meal cool completely before closing the lids.
