  1. 1. Rinse the quinoa thoroughly under cold water and cook it in salted water according to package instructions. Stir until done. Keep warm.
  2. 2. Preheat the oven to 200 degrees. Finely chop the onion and garlic and sauté them in a pot.
  3. 3. Stir the harissa paste into the vegetables. Pour in the coconut milk and bring the sauce to a boil. Season with salt and pepper.
  4. 4. Add the spinach to the sauce and let it wilt. Remove the pot from the heat.
  5. 5. Place the salmon fillets on the spinach mixture in an ovenproof dish. Put the dish in the oven and bake for 15 minutes.
  6. 6. Serve the salmon with the sauce directly on top of the quinoa. Enjoy warm.
