🐟 Galicia Oven Salmon with Harissa and Quinoa

Ingredients
- 400 g Salmon fillet (skin removed)
- 150 g Quinoa (raw)
- 2 EL Harissa paste
- 200 ml Coconut milk (can)
- 1 Stk Onion
- 2 Zehen Garlic
- 100 g Spinach (fresh)
- 1 Prise Salt
- 1 Prise Pepper
Instructions
- 1. Rinse the quinoa thoroughly under cold water and cook it in salted water according to package instructions. Stir until done. Keep warm.
- 2. Preheat the oven to 200 degrees. Finely chop the onion and garlic and sauté them in a pot.
- 3. Stir the harissa paste into the vegetables. Pour in the coconut milk and bring the sauce to a boil. Season with salt and pepper.
- 4. Add the spinach to the sauce and let it wilt. Remove the pot from the heat.
- 5. Place the salmon fillets on the spinach mixture in an ovenproof dish. Put the dish in the oven and bake for 15 minutes.
- 6. Serve the salmon with the sauce directly on top of the quinoa. Enjoy warm.
