  1. 1. Mix flour, water, 1 tbsp olive oil, salt and pepper in a bowl until a smooth dough forms.
  2. 2. Wrap the dough in cling film and let it rest in the fridge for 20 minutes.
  3. 3. Finely chop the onion and garlic, then sauté them in a pan with 1 tbsp olive oil.
  4. 4. Add the spinach and let it wilt briefly. Season with salt and pepper.
  5. 5. Roll out the dough on a floured surface and place it in a greased pie dish.
  6. 6. Spread the spinach mixture evenly over the dough and crumble the feta cheese on top.
  7. 7. Bake in a preheated oven at 180°C for about 25-30 minutes until the edges are golden brown.
