🍕 Spinach Galette

Ingredients
- 150 g Light Spelt Flour
- 70 ml Water
- 2 EL Olive Oil
- 200 g Fresh Spinach
- 100 g Feta Cheese
- 1 Onion
- 1 Garlic Clove
- 1 TL Salt
- 0.5 TL Pepper
Instructions
- 1. Mix flour, water, 1 tbsp olive oil, salt and pepper in a bowl until a smooth dough forms.
- 2. Wrap the dough in cling film and let it rest in the fridge for 20 minutes.
- 3. Finely chop the onion and garlic, then sauté them in a pan with 1 tbsp olive oil.
- 4. Add the spinach and let it wilt briefly. Season with salt and pepper.
- 5. Roll out the dough on a floured surface and place it in a greased pie dish.
- 6. Spread the spinach mixture evenly over the dough and crumble the feta cheese on top.
- 7. Bake in a preheated oven at 180°C for about 25-30 minutes until the edges are golden brown.
