Ingredients

250 g Mascarpone
Lime (freshly squeezed juice)
150 g Sugar
150 ml Whipping cream
2 sheets Gelatin
40 ml Amaretto
Raspberries
Kiwi slice
Lime zest
Raspberry puree

Instructions

1. Soak the gelatin in cold water.
2. Mix the lime juice and sugar with the mascarpone. Gently fold in the stiffly whipped cream. Dissolve the soaked gelatin in warm Amaretto and stir it into the cream.
3. Fill the cream into a piping bag with a large star tip. Pipe it onto dessert plates. Garnish with raspberries, kiwi slices, lime zest strips, and raspberry puree.
