🥞 Fruity Crêpes with Berry Cream

Ingredients
- 150 g All-purpose flour
- 3 Stk Eggs (Size M)
- 300 ml Whole milk
- 20 g Butter (for frying)
- 150 g Raspberries (cold)
- 200 ml Heavy cream
- 30 g Sugar
Instructions
- 1. Whisk flour, eggs, 100 ml milk and a pinch of salt in a bowl until smooth.
- 2. Gradually stir in the remaining milk into the batter.
- 3. Let the batter rest for 15 minutes so the flour can swell.
- 4. Whip the cream stiffly by streaming in the sugar.
- 5. Melt the butter in a non-stick pan and fry thin crêpes golden brown.
- 6. Place the crêpes on plates, add raspberries and cream on top.
