  1. 1. Whisk flour, eggs, and half of the milk in a bowl to form a smooth batter.
  2. 2. Add the remaining milk and stir in the crumbled low-fat quark.
  3. 3. Let the batter rest for 10 minutes.
  4. 4. Heat a non-stick pan over medium heat and lightly grease it with butter.
  5. 5. Pour one ladle of batter into the center and swirl the pan to cover the bottom.
  6. 6. Fry the crêpe for 2 minutes until golden brown, flip it, and fry for another 1 minute.
  7. 7. Spread a hot crêpe with quark and sprinkle cranberries on top. Fold it.
  8. 8. Drizzle honey over the finished crêpes and serve warm.
