🥞 Blueberry Yogurt Crêpes with Honey Glaze

Ingredients
- 150 g Flour
- 3 Stück Eggs (Size M)
- 250 ml Milk
- 15 g Butter (for frying)
- 200 g Blueberries (fresh or frozen)
- 200 g Greek Yogurt
- 20 g Honey
- 1 g Cinnamon
Instructions
- 1. Whisk the flour, eggs, and milk in a bowl until smooth. Let the batter rest for 10 minutes.
- 2. Melt 5g of butter in a non-stick pan over medium heat. Pour a ladle of batter into the pan and swirl to cover the bottom. Fry the crepe for 1 minute on each side until golden brown.
- 3. Repeat until all crepes are fried. Stack the finished crepes on a plate.
- 4. Sauté the blueberries in a small pan with the remaining liquid honey and cinnamon for 2 minutes until soft.
- 5. Stack three crepes on a plate. Add a dollop of Greek yogurt in the center and top with the blueberries. Serve warm.
