🥗 Green Bean Salad with Pan-Fried Goat Cheese

Ingredients
- 300 g Asparagus beans
- 150 g Fresh goat cheese log (no rind)
- 40 g Walnuts (roasted)
- 100 g Baby arugula
- 30 ml Olive oil
- 15 ml Balsamic vinegar
- 5 g Salt
- 2 g Black pepper (ground)
Instructions
- 1. Wash the asparagus beans and cut them into 4 cm long pieces.
- 2. Bring a pot of salted water to a boil and cook the beans for 5 minutes until al dente.
- 3. Drain the beans and rinse them immediately with cold water to fix the color.
- 4. Cut the goat cheese into 4 thick slices.
- 5. Heat 15 ml of olive oil in a pan over medium heat and fry the cheese slices for 2 minutes each until golden brown.
- 6. Combine the arugula, cooled beans, walnuts, and fried cheese slices in a large bowl.
- 7. Mix the remaining vinegar, oil, salt, and pepper in a small bowl and pour the dressing over the salad.
- 8. Serve the salad immediately while warm.
