1. Peel the potatoes and cut them into bite-sized pieces. Fry them in 2 tablespoons of hot ghee (clarified butter) for about 5 minutes until golden brown. Season with salt and pepper afterwards.
2. Peel the onions and slice them into strips. Add them to the potatoes along with a bay leaf, garam masala (Indian spice blend), cumin, and coriander. Fry everything for another 5 minutes until nicely browned.
3. Fry four sunny-side-up eggs in the remaining ghee. Season the potatoes with salt, pepper, and a little lemon juice. Serve the potatoes topped with the fried egg.
