  1. 1. Preheat the oven to 200 °C (390 °F) conventional mode.
  2. 2. Peel the potatoes and slice them very thinly (approx. 2 mm).
  3. 3. Dice the chicken meat into bite-sized pieces.
  4. 4. Dice the onions finely and sauté them in butter until translucent.
  5. 5. Mix the potato slices, chicken, onions, mustard, salt, paprika, and half of the cheese in a bowl.
  6. 6. Roll out the puff pastry on a baking sheet into a rectangle (approx. 1 cm thick).
  7. 7. Distribute the potato filling evenly over the pastry, keeping the border clear.
  8. 8. Fold the free edges of the pastry over the filling and press firmly (or fold them inwards).
  9. 9. Brush the surface with a little water and sprinkle with the remaining cheese.
  10. 10. Bake the tarte for 35 to 40 minutes until the pastry is golden brown and the potatoes are tender.
  11. 11. Let the tarte rest for 10 minutes so the filling sets.
