1. Place the cranberries in the apple juice and let them soak in a tall container for about 10 minutes. Then drain the liquid, reserving about 2 tablespoons, and puree the cranberries together with the apple juice and the cream cheese. Sweeten with honey to taste.
2. Cut the brioche into four thick slices. In a bowl, whisk together the eggs, milk, sugar, and cinnamon. Briefly dip the bread slices in the mixture so they absorb the egg milk but do not become too soft.
3. Melt the butter in a pan over medium heat and fry the bread slices in it for about 3–4 minutes on each side until golden brown. Drizzle with a little honey and serve with the cranberry cream cheese. Enjoy your meal!
