🍑 French Roasted Peach Goat Cheese Salad

Ingredients
- 2 Stück Fresh peach
- 125 g Fresh goat cheese (Chèvre frais)
- 100 g Young arugula/rocket
- 40 g Walnut kernels
- 3 EL Olive oil
- 1 EL Balsamic vinegar
- 1 Prise Salt
- 1 Prise Black pepper
Instructions
- 1. Preheat the oven to 200 degrees Celsius.
- 2. Wash the peaches and cut them into quarters. Remove the pits.
- 3. Place the peach pieces on a baking sheet. Brush them with 1 tbsp of olive oil.
- 4. Roast the peaches in the oven for 15 minutes, until they are soft.
- 5. Meanwhile, toast the walnuts in a pan without oil over medium heat for 3 minutes.
- 6. In a bowl, mix the arugula with the remaining olive oil, vinegar, salt, and pepper.
- 7. Place the warm mixture of arugula and peaches onto plates.
- 8. Crumble the goat cheese over the top and sprinkle with walnuts and fresh mint.
