🧅 French Onion Tart with Thyme

Ingredients
- 1 Packung (500 g) Puff pastry (shelf life at least 1 week)
- 800 g Onions (yellow, roughly chopped)
- 50 g Butter
- 15 g Flour
- 200 ml Heavy cream (at least 30% fat)
- 150 g Gouda or Emmentaler cheese, grated
- 1 EL Thyme (fresh)
- 1 TL Salt
- 1/2 TL Black pepper
Instructions
- 1. Preheat the oven to 200 degrees Celsius (conventional heat).
- 2. Sauté the onions in butter over medium heat for about 20 minutes until soft and caramelized. Stir in the flour and cook for 1 more minute.
- 3. Deglaze the flour with the cream, stir in thyme, salt, and pepper. Remove the pan from the heat.
- 4. Line a baking sheet with parchment paper. Roll out the puff pastry and place it on the sheet. Prick the edges with a fork.
- 5. Pour the onion mixture evenly over the pastry. Sprinkle the grated cheese on top.
- 6. Bake the tart for 25 minutes in the oven until the pastry is golden brown and risen.
