  1. 1. Peel the onions and slice them into thin strips.
  2. 2. Melt the butter in a large pot over medium heat.
  3. 3. Add the onions and cook slowly for 40 minutes until soft and caramelized (dark brown). Stir occasionally.
  4. 4. Deglaze the onions with the white wine and let it boil off for 2 minutes.
  5. 5. Pour in the beef stock. Season with salt and pepper. Let the soup simmer for 15 minutes.
  6. 6. Preheat the oven to 200 degrees Celsius (conventional mode).
  7. 7. Pour the soup into heat-proof bowls. Place one slice of bread on the surface of each and sprinkle the cheese on top.
  8. 8. Bake the soups for 10 minutes in the oven until the cheese is golden brown and bubbling.
