🧅 Simple Onion Soup with Cheese Crust

Ingredients
- 600 g Onions
- 40 g Butter
- 800 ml Beef stock
- 100 ml White wine
- 120 g Grated cheese (Gruyère or Emmental)
- 4 Scheiben Crusty bread (sliced)
- 1 Prise Salt
- 1 Prise Pepper
Instructions
- 1. Peel the onions and slice them into thin strips.
- 2. Melt the butter in a large pot over medium heat.
- 3. Add the onions and cook slowly for 40 minutes until soft and caramelized (dark brown). Stir occasionally.
- 4. Deglaze the onions with the white wine and let it boil off for 2 minutes.
- 5. Pour in the beef stock. Season with salt and pepper. Let the soup simmer for 15 minutes.
- 6. Preheat the oven to 200 degrees Celsius (conventional mode).
- 7. Pour the soup into heat-proof bowls. Place one slice of bread on the surface of each and sprinkle the cheese on top.
- 8. Bake the soups for 10 minutes in the oven until the cheese is golden brown and bubbling.
