  1. 1. Mix the flour and sugar in a large bowl.
  2. 2. Add the eggs and whisk them in.
  3. 3. Slowly pour in the milk and continue stirring until the batter is smooth and lump-free.
  4. 4. Heat a non-stick frying pan over medium heat and add a small piece of butter.
  5. 5. Pour a ladle of about 80 milliliters into the pan and immediately spread it in a circular motion.
  6. 6. Fry the crêpe for about 90 seconds until the edges start to turn brown, then flip it.
  7. 7. Prepare the remaining crêpes in the same way and place them on a plate.
  8. 8. Combine the blueberries with the lemon juice and zest.
  9. 9. Stack the crêpes on top of each other and place the blueberry mixture on top.
  10. 10. Serve the dish warm.
