🥞 French Blueberry Crêpes with Lemon

Ingredients
- 50 g Sugar
- 120 g Flour
- 2 Stk Eggs (Size M)
- 300 ml Milk
- 20 g Butter (for frying)
- 150 g Blueberries (fresh or frozen)
- 1 Stk Lemon (juice and zest)
Instructions
- 1. Mix the flour and sugar in a large bowl.
- 2. Add the eggs and whisk them in.
- 3. Slowly pour in the milk and continue stirring until the batter is smooth and lump-free.
- 4. Heat a non-stick frying pan over medium heat and add a small piece of butter.
- 5. Pour a ladle of about 80 milliliters into the pan and immediately spread it in a circular motion.
- 6. Fry the crêpe for about 90 seconds until the edges start to turn brown, then flip it.
- 7. Prepare the remaining crêpes in the same way and place them on a plate.
- 8. Combine the blueberries with the lemon juice and zest.
- 9. Stack the crêpes on top of each other and place the blueberry mixture on top.
- 10. Serve the dish warm.
