  1. 1. Cut the chicken breast into 2 cm cubes. Season with half of the herbs de Provence, salt, and pepper.
  2. 2. Dice the onion, pepper, and zucchini into pieces roughly the same size as the chicken.
  3. 3. Heat 1 tbsp of olive oil in a large pan. Sauté the chicken cubes over medium-high heat for 5 minutes until golden brown. Remove the meat from the pan and set aside.
  4. 4. Add the remaining olive oil to the same pan. Sauté the onions and peppers for 3 minutes.
  5. 5. Add the zucchini and sauté everything for another 3 minutes.
  6. 6. Add the seared chicken, canned tomatoes, and the remaining herb mix back into the pan. Stir in the beef stock powder. Let the sauce simmer gently for 5 minutes.
  7. 7. Cook the couscous according to package instructions with water and salt. Let it sit for 5 minutes to swell.
  8. 8. Fluff the couscous with a fork to loosen it.
  9. 9. Divide the couscous among 4 serving plates. Top with the chicken-tomato-vegetable mixture.
