🍲 Provence Chicken Bowl with Couscous

Ingredients
- 600 g Chicken breast fillet
- 250 g Coarse couscous mix
- 1 Stk. Onion
- 2 Stk. Red pepper
- 2 Stk. Zucchini
- 400 g Canned tomatoes (crushed)
- 2 TL Beef stock powder
- 2 EL Herbs de Provence
- 3 EL Olive oil
- 1 TL Salt
- 1 Prise Black pepper
Instructions
- 1. Cut the chicken breast into 2 cm cubes. Season with half of the herbs de Provence, salt, and pepper.
- 2. Dice the onion, pepper, and zucchini into pieces roughly the same size as the chicken.
- 3. Heat 1 tbsp of olive oil in a large pan. Sauté the chicken cubes over medium-high heat for 5 minutes until golden brown. Remove the meat from the pan and set aside.
- 4. Add the remaining olive oil to the same pan. Sauté the onions and peppers for 3 minutes.
- 5. Add the zucchini and sauté everything for another 3 minutes.
- 6. Add the seared chicken, canned tomatoes, and the remaining herb mix back into the pan. Stir in the beef stock powder. Let the sauce simmer gently for 5 minutes.
- 7. Cook the couscous according to package instructions with water and salt. Let it sit for 5 minutes to swell.
- 8. Fluff the couscous with a fork to loosen it.
- 9. Divide the couscous among 4 serving plates. Top with the chicken-tomato-vegetable mixture.
