🥒 Focaccia with Zucchini and Fresh Mint

Ingredients
- 500 g Wheat flour (Type 405)
- 7 g Dry yeast
- 320 ml Lukewarm water
- 60 ml Olive oil (extra virgin)
- 10 g Salt
- 300 g Zucchini (medium)
- 20 g Fresh mint
- 150 g Feta cheese
- 5 g Sugar
Instructions
- 1. Dissolve yeast and sugar in the lukewarm water in a large bowl. Wait 5 minutes until a foam layer forms.
- 2. Add flour and salt. Knead the dough on a floured surface for 10 minutes until smooth and elastic.
- 3. Return the dough to the bowl, cover with a cloth, and let it rise in a warm place for 60 minutes until it has doubled in size.
- 4. Preheat the oven to 220 degrees Celsius top/bottom heat. Grease a baking sheet (approx. 30x20 cm) generously with olive oil.
- 5. Press the dough into the sheet with your fingers. Let it rest for another 20 minutes.
- 6. Wash the zucchini and slice it thinly. Chop the mint finely and crumble the feta.
- 7. Distribute zucchini, mint, and feta evenly over the dough. Press them in slightly.
- 8. Put the focaccia in the oven for 25 minutes. Remove it and let it cool for 5 minutes before cutting it into pieces.
