  1. 1. Dissolve yeast and sugar in the lukewarm water in a large bowl. Wait 5 minutes until a foam layer forms.
  2. 2. Add flour and salt. Knead the dough on a floured surface for 10 minutes until smooth and elastic.
  3. 3. Return the dough to the bowl, cover with a cloth, and let it rise in a warm place for 60 minutes until it has doubled in size.
  4. 4. Preheat the oven to 220 degrees Celsius top/bottom heat. Grease a baking sheet (approx. 30x20 cm) generously with olive oil.
  5. 5. Press the dough into the sheet with your fingers. Let it rest for another 20 minutes.
  6. 6. Wash the zucchini and slice it thinly. Chop the mint finely and crumble the feta.
  7. 7. Distribute zucchini, mint, and feta evenly over the dough. Press them in slightly.
  8. 8. Put the focaccia in the oven for 25 minutes. Remove it and let it cool for 5 minutes before cutting it into pieces.
