  1. 1. Mix the chickpea flour with water to form a smooth, liquid batter. Let the batter rest for 2 minutes.
  2. 2. Finely chop the onion and fry it in olive oil for 3 minutes. Add the chopped tomatoes.
  3. 3. Fry the batter in a non-stick pan thinly into a crêpe, golden brown on both sides for 2 minutes each.
  4. 4. Cut the feta cheese into small cubes and add them to the pan together with the halved cherry tomatoes. Fry everything together for 2 minutes.
  5. 5. Roll the crêpe with the filling and serve warm.
