🥞 Layered Crêpe with Core

Ingredients
- 150 g Chickpea flour
- 200 ml Water
- 200 g Tomatoes
- 100 g Cherry tomatoes
- 1 Stk Onion
- 30 ml Olive oil
- 100 g Feta cheese
Instructions
- 1. Mix the chickpea flour with water to form a smooth, liquid batter. Let the batter rest for 2 minutes.
- 2. Finely chop the onion and fry it in olive oil for 3 minutes. Add the chopped tomatoes.
- 3. Fry the batter in a non-stick pan thinly into a crêpe, golden brown on both sides for 2 minutes each.
- 4. Cut the feta cheese into small cubes and add them to the pan together with the halved cherry tomatoes. Fry everything together for 2 minutes.
- 5. Roll the crêpe with the filling and serve warm.
