🥩 Fine Beef Tartare Salad with Garlic Croutons

Ingredients
- 300 g Beef tenderloin (raw, fresh)
- 100 g Rye bread (in cubes)
- 1 Stück Garlic clove
- 2 EL Olive oil
- 15 g Capers
- 80 g Arugula
- 1 Stück Lemon
- 1 TL Mustard (French, grainy)
- 1 Prise Pepper (black, ground)
- 1 Prise Salt
Instructions
- 1. Cut the beef tenderloin into small cubes (approx. 1 cm). Place it in a bowl.
- 2. Press the garlic clove directly into the meat using a press.
- 3. Add the drained capers. Squeeze half the lemon and whisk the juice with the mustard.
- 4. Season the meat mixture with pepper and a pinch of salt. Fold everything in gently.
- 5. Cut the bread into small cubes and fry them in a pan with olive oil until golden brown and crispy.
- 6. Wash the arugula and dry it well. Place it as a bed on four plates.
- 7. Place the beef tartare in the center of the arugula. Distribute the warm garlic croutons on top.
- 8. Serve the salad immediately to keep the meat fresh and the croutons crispy.
