  1. 1. Cut the beef tenderloin into small cubes (approx. 1 cm). Place it in a bowl.
  2. 2. Press the garlic clove directly into the meat using a press.
  3. 3. Add the drained capers. Squeeze half the lemon and whisk the juice with the mustard.
  4. 4. Season the meat mixture with pepper and a pinch of salt. Fold everything in gently.
  5. 5. Cut the bread into small cubes and fry them in a pan with olive oil until golden brown and crispy.
  6. 6. Wash the arugula and dry it well. Place it as a bed on four plates.
  7. 7. Place the beef tartare in the center of the arugula. Distribute the warm garlic croutons on top.
  8. 8. Serve the salad immediately to keep the meat fresh and the croutons crispy.
