  1. 1. Cut the cherry tomatoes in halves or quarters. Slice the red onion into thin half-moons.
  2. 2. Place the vegetables in a bowl. Squeeze the juice of half a lemon over them. Add 15 ml olive oil, cumin, and paprika powder. Mix everything well.
  3. 3. Cut the cooked chicken thighs into cubes. Season them with half the salt and pepper. Heat a non-stick frying pan over medium heat.
  4. 4. Fry the chicken cubes in 10 ml olive oil for approx. 5-7 minutes until lightly browned on the outside and heated through.
  5. 5. Crumble the feta cheese roughly. Cut the rest of the lemon into wedges.
  6. 6. Finish the vegetables with apple cider vinegar. Divide the salad onto 4 bowls. Place the warm chicken cubes on top and add the crumbled feta.
  7. 7. Serve the bowl with lemon wedges. Good for pre-cooking: store vegetables and meat separately and combine before serving.
