🍲 Fasolada (Bean Soup)

Ingredients
- 200 g White Beans
- 2 Stück Carrots
- 1 Stück Onion
- 300 g Tomatoes
- 2 EL Olive Oil
- 1 Handvoll Parsley
- 1 TL Salt
- 0.5 TL Pepper
- 1 EL Lemon Juice
Instructions
- 1. Soak beans overnight and then cook.
- 2. Sauté onions and carrots in a pot with olive oil.
- 3. Add tomatoes and cooked beans.
- 4. Add water and simmer for 30 minutes.
- 5. Add salt, pepper, and lemon juice.
- 6. Garnish with parsley and serve.
