🥗 Engadina Sardine and Bean Salad with Lemon

Ingredients
- 200 g Sardines in olive oil (drained)
- 200 g Chickpeas (from can, rinsed)
- 150 g Cucumber (diced small)
- 50 g Onion (red, finely diced)
- 20 ml Lemon (juice)
- 15 ml Olive oil
- 10 g Parsley (chopped)
- 3 g Salt
- 1 g Black pepper
Instructions
- 1. Put the chickpeas in a large bowl.
- 2. Rinse the chickpeas under cold water and let them drain well.
- 3. Dice the cucumber and red onion into small pieces.
- 4. Add the vegetables to the chickpeas.
- 5. Take the sardines out of the can and flake them roughly with a fork.
- 6. Gently fold the sardines into the salad.
- 7. Mix the lemon juice with olive oil, salt, and pepper.
- 8. Pour the dressing over the salad.
- 9. Sprinkle the chopped parsley over the salad.
- 10. Serve the salad immediately.
