  1. 1. Preheat the oven to 200 degrees Celsius (conventional heat).
  2. 2. Season the cooked pumpkin with salt. Puree it smoothly in a bowl.
  3. 3. Heat the olive oil in a pan. Sauté the spinach for 2 minutes until wilted. Let it cool and squeeze out excess water.
  4. 4. Mix the pumpkin puree, drained spinach, and chopped spring onions in a large bowl. Season with chili flakes.
  5. 5. Roll out the puff pastry on a floured surface to a thin layer (approx. 3 mm). Cut out 8 circles (approx. 12 cm in diameter).
  6. 6. Place one tablespoon of filling on half of each dough circle. Moisten the edge slightly with water and fold the other half over. Press the edges firmly with a fork.
  7. 7. Place the pastries on a baking sheet lined with parchment paper. Brush them with the egg yolk and sprinkle sesame seeds on top. Poke 3-4 small holes in the top with a fork.
  8. 8. Bake the pastries in the oven for 25 minutes, until they are golden brown and flaky.
