🥟 Green Galician Pastries with Spinach and Pumpkin

Ingredients
- 500 g Puff Pastry (thawed)
- 200 g Fresh Spinach (washed)
- 250 g Hokkaido Pumpkin (diced and boiled)
- 3 Stück Spring Onions (chopped)
- 0.5 TL Chili Flakes
- 1 Stück Egg Yolk (beaten for brushing)
- 1 EL Sesame Seeds (black)
- 1 EL Olive Oil
- 1 Prise Salt
Instructions
- 1. Preheat the oven to 200 degrees Celsius (conventional heat).
- 2. Season the cooked pumpkin with salt. Puree it smoothly in a bowl.
- 3. Heat the olive oil in a pan. Sauté the spinach for 2 minutes until wilted. Let it cool and squeeze out excess water.
- 4. Mix the pumpkin puree, drained spinach, and chopped spring onions in a large bowl. Season with chili flakes.
- 5. Roll out the puff pastry on a floured surface to a thin layer (approx. 3 mm). Cut out 8 circles (approx. 12 cm in diameter).
- 6. Place one tablespoon of filling on half of each dough circle. Moisten the edge slightly with water and fold the other half over. Press the edges firmly with a fork.
- 7. Place the pastries on a baking sheet lined with parchment paper. Brush them with the egg yolk and sprinkle sesame seeds on top. Poke 3-4 small holes in the top with a fork.
- 8. Bake the pastries in the oven for 25 minutes, until they are golden brown and flaky.
