🥟 Oven Pockets with Spinach and Feta

Ingredients
- 1 Packung (450 g) Puff Pastry (Chilled)
- 200 g Fresh Spinach
- 150 g Feta Cheese
- 1 Stück Onion
- 1 EL Olive Oil
- 1 Stück Egg Yolk
- 1 EL Sesame Seeds
- 1 TL Sugar
- 1 Prise Salt
- 1 TL Pink Peppercorns
Instructions
- 1. Preheat the oven to 180 degrees Celsius fan forced.
- 2. Finely chop the onion and sauté in olive oil for 3 minutes until translucent.
- 3. Add the spinach and cook until it wilts for 2 minutes.
- 4. Crumble the feta over the spinach and season with salt and pepper. Remove from heat.
- 5. Roll out the puff pastry on a floured surface. Cut into 8 square parts.
- 6. Place one spoonful of filling in the center of each square.
- 7. Fold the triangles into pockets and press the edges firmly with a fork.
- 8. Whisk the egg yolk with the pinch of sugar. Brush the pockets with it and sprinkle sesame seeds on top.
- 9. Bake the pockets in the oven for 20 minutes until golden brown.
