  1. 1. Preheat the oven to 180 degrees Celsius fan forced.
  2. 2. Finely chop the onion and sauté in olive oil for 3 minutes until translucent.
  3. 3. Add the spinach and cook until it wilts for 2 minutes.
  4. 4. Crumble the feta over the spinach and season with salt and pepper. Remove from heat.
  5. 5. Roll out the puff pastry on a floured surface. Cut into 8 square parts.
  6. 6. Place one spoonful of filling in the center of each square.
  7. 7. Fold the triangles into pockets and press the edges firmly with a fork.
  8. 8. Whisk the egg yolk with the pinch of sugar. Brush the pockets with it and sprinkle sesame seeds on top.
  9. 9. Bake the pockets in the oven for 20 minutes until golden brown.
