  1. 1. Peel the onions and cut them into thin strips.
  2. 2. Heat the butter in a pot.
  3. 3. Sauté the onions in it until they are translucent.
  4. 4. Pour the vegetable stock over the onions.
  5. 5. Season the soup with thyme, cumin, and a pinch of freshly grated nutmeg.
  6. 6. Let the onion soup simmer for 25 to 30 minutes.
  7. 7. Peel the garlic.
  8. 8. Grate the cheese finely.
  9. 9. Toast the baguette slices.
  10. 10. Rub the toast slices with the peeled garlic clove.
  11. 11. Sprinkle the slices with the grated cheese.
  12. 12. Press the garlic through a garlic press.
  13. 13. Stir the pressed garlic into the soup.
  14. 14. Season the soup with salt and pepper to taste.
  15. 15. Fill the soup into fireproof soup bowls.
  16. 16. Place the topped bread slices on the soup.
  17. 17. Preheat the oven to 200 °C (180 °C for fan-assisted or gas mark 3).
  18. 18. Bake the soups in the oven until the cheese is golden brown.
  19. 19. Wash the thyme and shake it dry.
  20. 20. Pluck the thyme leaves from the stems.
  21. 21. Sprinkle the thyme leaves over the finished soup.
  22. 22. Serve the onion soup hot.
