🍽️ Classic Onion Soup Without Alcohol

Ingredients
- 750 g onions
- 50 g butter
- 1 l vegetable stock
- 1 tsp dried thyme
- 1 pinch ground cumin
- nutmeg
- 100 g Gruyère cheese
- 2 garlic cloves
- 12 baguette slices
- salt
- pepper (from the mill)
- 2 sprigs thyme
Instructions
- 1. Peel the onions and cut them into thin strips.
- 2. Heat the butter in a pot.
- 3. Sauté the onions in it until they are translucent.
- 4. Pour the vegetable stock over the onions.
- 5. Season the soup with thyme, cumin, and a pinch of freshly grated nutmeg.
- 6. Let the onion soup simmer for 25 to 30 minutes.
- 7. Peel the garlic.
- 8. Grate the cheese finely.
- 9. Toast the baguette slices.
- 10. Rub the toast slices with the peeled garlic clove.
- 11. Sprinkle the slices with the grated cheese.
- 12. Press the garlic through a garlic press.
- 13. Stir the pressed garlic into the soup.
- 14. Season the soup with salt and pepper to taste.
- 15. Fill the soup into fireproof soup bowls.
- 16. Place the topped bread slices on the soup.
- 17. Preheat the oven to 200 °C (180 °C for fan-assisted or gas mark 3).
- 18. Bake the soups in the oven until the cheese is golden brown.
- 19. Wash the thyme and shake it dry.
- 20. Pluck the thyme leaves from the stems.
- 21. Sprinkle the thyme leaves over the finished soup.
- 22. Serve the onion soup hot.
