🍽️ Classic onion soup with crispy baked croutons

Ingredients
- 1 kg vegetable onion
- 50 g butter
- 250 ml dry white wine
- nutmeg
- 1 tsp freshly chopped thyme
- 1 pinch ground cumin
- 4 slices baguette
- salt
- pepper (from the mill)
- 2 garlic cloves
- 4 slices raclette cheese
Instructions
- 1. Peel the onions and cut them into thin strips.
- 2. Heat the butter in a pot.
- 3. Sauté the onions in it until they are translucent.
- 4. Pour the broth and wine into the pot.
- 5. Add nutmeg, thyme, and cumin.
- 6. Let the soup simmer for 25 to 30 minutes.
- 7. Preheat the oven grill.
- 8. Toast the bread slices.
- 9. Rub the toast slices with the peeled garlic clove.
- 10. Squeeze the garlic clove and stir it into the soup.
- 11. Season the soup with salt and pepper.
- 12. Pour the soup into fireproof soup bowls.
- 13. Place the bread slices on top of the soup.
- 14. Top the slices with cheese.
- 15. Place the bowls under the oven grill for a few minutes.
- 16. Remove them when the cheese is melted.
- 17. Serve the soup immediately.
