🍽️ Classic Onion Soup with Crispy Cheese Toast

Ingredients
- 1 kg onions
- 50 g butter
- 1 l vegetable broth
- 250 ml dry red wine
- Nutmeg
- 1 tsp fresh or 1/2 tsp dried thyme (or 1/2 tsp dried thyme)
- 1 pinch ground cumin
- 50 g raclette cheese (grated)
- 1 bunch parsley
- 4 slices baguette
- 2 garlic cloves
- Salt
- Pepper (from the mill)
Instructions
- 1. Peel the onions and slice them into thin strips.
- 2. Heat the butter in a pot.
- 3. Sauté the onions in it until they are soft and translucent.
- 4. Pour the broth and wine into the pot.
- 5. Add nutmeg, thyme, and cumin.
- 6. Let the soup simmer on low heat for 25 to 30 minutes.
- 7. Toast the bread slices until they are golden brown.
- 8. Rub the peeled garlic clove over the toast slices.
- 9. Cut the toast slices into smaller pieces if necessary.
- 10. Press the remaining garlic clove through a garlic press.
- 11. Stir the pressed garlic into the soup.
- 12. Season the soup finally with salt and pepper.
- 13. Fill the soup into heatproof soup bowls.
- 14. Place the garlic toast slices on top of the soup.
- 15. Generously sprinkle the toast slices with cheese.
- 16. Place the bowls under the grill for a few minutes.
- 17. Wait until the cheese is completely melted.
- 18. Sprinkle the finished soup with finely chopped parsley.
- 19. Serve the onion soup hot.
